Today I made Ensaymada. It tastes very similar to Brioche, but it’s finished with lots of butter, sugar and a strong cheese.

First, the dough was formed into batons, which were then rolled into long strips. Butter was brushed on the surface, then sprinkled with cheddar cheese, rolled and arranged into a snail shape.

Next time I make this, I’ll make them half the size (each one actually contains only 180g of dough, but is more than 10cm in diameter), add more sweetness to the dough, and use stronger cheese, perhaps parmesan.

They were also very tall. Perhaps 8cm tall. It made for a great-looking bread, but not enough topping to give it that ensaymada flavour.
